
Hello, good morning to all coffee lovers. In my constant restlessness to create new desserts, I have dabbled a lot in those made with coffee, and although the traditional ones such as tiramisu and quesillo I have already tried them with success, I wanted to try one of my favorite desserts, the marquise. This dessert is also known as carlota or cold cake, since its final step is to refrigerate it before eating it.

In the Marquesa de café, the change is to substitute the milk and chocolate for coffee and coffee with milk. Below are the ingredients I used and the steps. If you prepare it, I know you will love it. I was fascinated.

INGREDIENTS
1 cup of liquid milk
1 cup of strong coffee
50 gr of wheat flour
100 gr of sugar
2 egg yolks
1 tablespoon vanilla
1 teaspoon of powdered cinnamon
1 package of Maria cookies
1 package of chocolate oreo cookies
½ cup of coffee to moisten the cookiesHalf a cup of water.

STEPS
1.- The first thing to do is to prepare a coffee pastry cream.

2.- Reserve a little of the liquid milk to mix with the egg yolks and the flour.

3.- Then put the rest of the milk, the coffee, the vanilla, the cinnamon and the sugar in a saucepan, and take it to moderate heat until it gets a little hot.


4.- With a whisk, mix the egg yolks with the flour and the reserved milk.
5.- This mixture is added to the warm milk, and continues stirring with the whisk so that it does not stick to the bottom.

6.- It is ready when it thickens and boils.

7.- Pour into a deep dish and let it rest for a couple of hours.

8.- Crush the oreo cookies, if you like, remove the cream from the cookies and add it to the marquise inside.

9.- Pour the pastry cream into a piping bag placed in a glass for convenience.

10.- Moisten the Maria cookies with coffee and place them as a base in a container of your choice.


11.- Then place a layer of pastry cream, crushed oreo cookies, and repeat the process.

12.- Both crushed cookies are placed on the surface.
13.- It is taken to the refrigerator for a few hours to be able to eat.
