Cereals Mixed With Vegetables

A few days ago, I noticed an interesting combination in a local shop: a mix of 5 different cereals in a box. The sign on the box said, "Barley, wheat, pira, brown rice, and oats are the perfect blend for a Mediterranean diet. It is ideal for hot and cold dishes, can be seasoned with vegetables, and is quick and easy to prepare in 10 minutes."

Well, I need something like that for quick preparation.

And I've done it my way, which means I've added a few ingredients from all over the planet :)
So, this recipe today is original, improvised, vegetarian, and cooked for the first time. I don't know if it's vegan because I didn't look closely at the ingredients in my added sauces (arrabbiata and soy sauce).

Recipe for Cereal mixed with vegetables (my way) - 4 servings:

  • 5 cereal mix, 200 - 250 grams
  • young soybeans, one cup from the freezer (last year's harvest)
  • sun-dried tomatoes in oil
  • capers in brine, one good tablespoon (must be washed in water first)
  • two stems of young onions
  • one carrot
  • a piece of celery stalk
  • a piece of ginger
  • soy sauce, light, a tablespoon or two
  • Arrabbiata, hot sauce made from tomatoes and hot peppers, a tablespoon or two
  • Garam masala spice mix
  • salt and pepper if necessary

First, I quickly defrosted the young soya beans in boiling water (last year's harvest - not much, but enough to add a few times to a dish) and peeled the beans.

Then, chop the ginger into small pieces. Maybe I should grate it? What do I know?
And then, I chopped up a young onion.

Next came the sundried tomatoes, three of which I ripped into small pieces.

Within 10 minutes, I chopped all the other ingredients.
I must mention the capers because they were in brine, very salty, and sometimes bitter, so I rinsed them in cold water.

Ten minutes have gone by, and I haven't even started cooking...

I should have cooked the cereal mix first. In the meantime, I'd have time to prepare the other vegetables.
Yes, I'll know for another time.

10 minutes at a low boil and twice the amount of water, plus a teaspoon of salt.

In another pot, I fried the ginger and the sun-dried tomatoes in oil, two tablespoons of oil in which the tomatoes were pickled. This oil has a delicious aroma.
First, I fried the ginger and sun-dried tomatoes. Then, to make it slightly hot, I added a tablespoon of soy sauce and a tablespoon of Arabiatta. Finally, I added the young soya beans, the peppers, and the carrots.

Meanwhile, the cereals were still cooking.

After ten minutes of cooking the vegetables, I turned off the heat, but the cereal was still hard and too al dente for my taste, so I cooked it for another five minutes.

What now?
The cereal mix is cooked, I have the sauce, and I must add the raw ingredients.

Mix everything, and the dish is ready.

Now, I'll serve.

It's delicious. Each grain, including the other vegetables, has its texture and taste. It is suitable as a stand-alone dish or a side dish with goulash, curry, or something else.

Since this is my first time doing this, the cereal must be cooked longer than the instructions say. After 10 minutes, the grains are still harsh and raw - at least to me.

My hunger has been awakened by reading your post today, and I admire the love you have put into this recipe that was born almost from nothing. I don't think I've ever cooked with soy, it's not very common at home, but I think I can copy this idea and make it my way too in a future lunch. Thank you for sharing it, you have inspired me...

We plant soya beans here, even though they are not indigenous. My mother has had the same soya seeds for over 30 years; she never buys them, so I believe they are not genetically modified.
Otherwise, it is a combination of different cereals and Mediterranean and Asian spices, and it all fits together. ๐Ÿ˜‹

I was introduced here on a post to haleem. It has similar grains, comes in a box mix with a packet of spices that I love. I cook it with beef and top with fried onions, but I bet it would be tasty with vegetables too. Thanks for the idea!

If I were you, I would simply soak the grain mixture in cold water before use, then rinse it again in cold water and finally cook it. Who can know what has been sprayed over the fields these days?

I just washed the cereal because it was supposed to be pre-cooked, so it only took 10 minutes. I always was ingredients because, you're right, who knows what cellars they've swept it out of together. ๐Ÿ˜Ž
