When you don't have time to prepare breakfast, lunch, or dinner, here's a quick and easy recipe from my kitchen from a week ago.

I had to take my son to the hospital for a check-up, about an hour's drive from home. There is nothing like that, but they don't have the facilities here. He had an appointment at noon, and before we went there, I made him toast with an egg because he was hungry. And when he is hungry, he is different - more nervous and irritable.

I didn't come up with the egg on toast; I read some recipes and told him I could make toast. OK, that calmed him down.

Ingredients - for one

  • two pieces of toasted bread; you can use other bread, too
  • two eggs
  • one slice of ham, alternatively other salami
  • one slice of cheese, whichever
  • salt and pepper if necessary

It's very easy to prepare; you've probably made toast before. And that's where we start.
Turn on the toaster and make a simple sandwich: place a piece of bread on it, put a slice of salami and cheese on it, and cover it with another piece. Of course, we can improvise here and put anything we can think of on the bread... but that's in the #foodporn category :)
Close the toaster to let the sandwich toast.

Crack one egg into a cup while the sandwich is warming in the toaster, and mix well. If you think it's too little, add a tablespoon or so of water or milk.
Salt and pepper if necessary.

What happens to the toast?
It shouldn't be too toasted; it's enough for the bread to be a little crispy and for the cheese to melt. It depends a lot on the toaster itself. Some heat up very quickly, others don't. I believe you know what yours is like.

Remove the toast from the toaster and dip it in the beaten egg, first on one side and then on the other.

Heat a couple of tablespoons of oil in a frying pan over medium heat. Add the toast soaked in egg and fry for a few minutes on one side to give it a crust and then on the other.
It would have been tastier if I had baked it in butter, but I didn't have any.

When it's enough browned, remove it to a plate.

Now, we'll bake a sunside egg in the same pan.
Salt and pepper if necessary.

When the egg is cooked to your liking, place it on the toast.
A little more pepper mixture and the dish is ready!
You can serve it.

Yum!!! Looking at your pan photos, I immediately got hungry.

Looks delicious, despite not being made with butter.
Imagine if it was made with butter, which unfortunately you didn't have. That's a real shame. But at least there is ham in it, so it's definitely delicious.

In Germany we call this β€œStrammer Max”. Requires butter. 😝

We don't use much butter for baking here; we use more olive oil. But there was no more butter in the fridge. It was immediately added to the grocery list :)
