A tasty quick weekend meal to eat outdoors and enjoy on a beautiful summer evening.
This pretty little house finch stopped by to sing along with the music we had playing while we cooked on the grill.
Here is the Recipe that I used.
¼ cup herb-infused extra-virgin olive oil
½ lemon, juiced
salt and ground black pepper to taste
1 pound fresh shrimp, peeled and deveined
1 (8 ounce) package angel hair pasta
2 teaspoons herb-infused extra-virgin olive oil
½ red onion, thinly sliced
2 Roma tomatoes, diced
3 cloves garlic, minced
¼ teaspoon crushed red pepper flakes
½ cup dry white wine
¼ cup heavy cream
1 tablespoon chopped fresh parsley
I didn't have angel hair pasta, and decided to use some of my favorite semola pasta instead.
Semola is a fine milled durum wheat that gives the pasta a silky smooth texture.
Hope you all have had a good weekend! I have been doing plenty of cooking and have the refrigerator nicely stocked with meals for the week.
