I made late night dinner. Yam is my favorite food; it's one food I can eat every day and every time. I can eat it in any form, be it fried, roasted, boiled, or pounded.
Today I made boiled yam and spinach sauce. This food is rich with different health benefits. It is packed with carbohydrates, which is to boost energy. For healthy digestion due to the fiber in the yam and spinach and so much more
Ingredients
1 small tuber of yam
450g of spinach
1 cup of palm oil
2 cups of tomato, pepper, ginger, and garlic puree
Salt to taste
Preparation
Spinach sauce preparation
I started by washing and chopping my spinach.
Then I went ahead to place my pot on medium heat. I added my palm oil to it and allow it to get hot for one minute.
When the oil was a little bit hot, I added my tomato mixture puree and allowed it to fry for about 4 minutes.
Then I added salt to taste and stir.
After which I turned the spinach into the mixture in the pot, stirred, and allowed it to steam for three minutes
Yam preparation
I started by peeling off the bark of the yam and cutting them into my desired shapes.
Then I rinsed it and put it on medium heat, added a little salt, and allowed it to cook.
Once the yam is soft, turn off the flame, pour out the remaining water in it, and serve.
