Hope you’re all having a beautiful and blessed day. Here’s a little slice of our simple life that I’d love tops share with you, something sweet, refreshing and made with gratitude.
Today felt like summer stretching its arms a little too wide, the kind of heat that makes you search for shade the moment you step outside. Instead of complaining about the weather, we decide to make the day sweeter, cooler and more meaningful. So, we headed out to harvest some fresh coconuts to prepare homemade buko salad with juice.


One of the blessings here sa amin is this: libre lang ang coconut and that gift doesn’t come from nowhere, it comes from the quiet effort of my father-in-law. Siya mismo ang nagtanim ng mga puno many years ago, and now, kami naman with his grandchildren are the once harvesting. There’s something beautiful about seeing the next generation enjoy what the older one planted.
The process was simple but joyful. After opening the coconut, we started to open then kudkudon using just a spoon and asparador. No high tech tools, only hands and a bit of teamwork. When the grated coconut was ready, we mixed in Todays, condensed milk, nestle cream and a coconut juice.




Since nagmamadali kami and the heat was begging for something cold, we added ice right away. The taste? Still delicious, cool, sweet and refreshing. Pero syempre mas masarap pa ito kapag na freeze for a few hours. That’s when the flavors settle and the texture becomes perfect for merienda.



What made this small moment special wasn’t just the food, it was the togetherness. A reminder that life’s sweetest comforts often grow from what our elders planted, literally and figuratively. Simple harvest. Simple ingredients. Yet overflowing with blessing.
