A Craving for Milkfish in Vinegar Stew and a Prayer for the Philippines 🙏

Hope all are safe and well! ☺️❤️🙏

As I write this, Typhoon Uwan has already entered the Philippine Area of Responsibility. It’s frightening to see how huge it is when I check the weather updates online. My heart trembles a bit each time I see the satellite images. It reminds me again how fragile life is and how much we depend on God’s mercy and protection. Praying hard for the Philippines. 🙏

But today, instead of letting fear take over, I decided to focus on something that gives me comfort — food. ❤️

What I’m going to share in this blog is not about how frightened I am of the coming typhoon, but about one of my cravings, the milkfish in vinegar stew or Paksiw na bangus. I suddenly remembered when I was in Taytay for a short vacation, my uncle cooked a delicious pot of Paksiw na bangus. The aroma filled the whole kitchen that mix of fresh fish, onion, ginger, garlic, and the sour broth that makes your stomach growl even before it’s ready.

It was so delicious and satisfying, especially because he added eggplant and lady’s fingers, the two ingredients that give more texture and flavor to the paksiw. I can still remember how the fish was perfectly cooked, soft, and full of flavor, and how the soup had that comforting balance of sour and savory. 😋

While my uncle was cooking, I just stood there watching him and observing every ingredient he added, the way he stirred the pot, and how he patiently waited for the right moment before turning off the stove. It looked so simple, but I could see the love and care he put into it. ❤️

One of these days, I’ll definitely try to cook my own version of milkfish in vinegar stew. Maybe not as perfect as my uncle’s, but I know it will be special because it’s made with the same love and memory that inspired me. ❤️

Even though there’s fear and uncertainty because of the approaching typhoon, I still remind myself to be grateful for the simple things such as a warm meal, a roof over my head, and the safety of my loved ones. These are blessings that truly matter. ❤️🙏
