Chef Challenge Tufo: Our Favorite Kankong with Tokwa.

Hello, hiver friends! Yesterday, I came across a post about the new challenge on Hive, and I was so excited to join. The challenge is all about creating a dish with tofu, which we call “tokwa” here. I don’t have tofu in my fridge, so today I went a quick trip to the market to buy some tofu and also to get some water spinach, or "kangkong, as we call it. I knew this would be the perfect convention for the dish I had in mind. When I got home, my husband immediately asked me what we were having for lunch. I told him we would be having water spinach with tofu and a bit of minced pork. He was so excited and started asking me repeatedly what time lunch would be ready. I can see he was really looking forward to it.

While I was preparing the dish, he keeps on coming the kitchen and keep asking, Is this your new recipe? He was a bit surprise because this was the first time I was combine tofu with kangkong. He’s always been my number one fan when it come to my cooking, so I can tell he was genuine curious about how it would taste. I feel good to see him so interested and excited to try something new. When the dish was finally ready and we sat down to eat, my husband and I enjoyed it so much, and the kids finished everything on their plates, too. It was such a satisfying moment! My husband then asked me, “Why haven’t you cooked this dish in the last 10 years? I’ve never seen you mix tofu with kangkong before!” I told him it was because of a challenge I had joined in one of the communities on Hive. I explained that this was something new I was trying because of the challenge, and he laughed, saying, “Hopefully, the next cooking challenge won’t take you so long to get to. But I can see that the community is really helping you become more creative in the kitchen now. I’m so proud of you, babe. Thank you for the lunch!

His words made me smile and laugh. It was a simple but special moment that reminded me how much I appreciate his support. As for the dish itself, I have to admit, it was entirely my own idea! The original dish I intended to make didn’t quite come together because some ingredients didn’t arrive on time. But sometimes, when life doesn’t go as planned, it sparks creativity, and this dish was the result. It felt good to take something unexpected and turn it into a delicious meal. I’m really grateful for the opportunity to be part of this challenge, as it’s encouraging me to experiment with different ingredients and flavors. The community on Hive has been a huge motivator for me to keep trying new things in the kitchen, and I’m excited to continue sharing my culinary experiments with everyone. Who knows, maybe I’ll keep coming up with new dishes that I wouldn’t have thought of otherwise. And next time, I’ll make sure I have all the ingredients I need in advance—well, at least I’ll try! But for today, I’m happy with how everything turned out, and I’m glad to have made something that made my family so happy.

Ingredient:
1.Tufo or Tokwa
2.Water spinach or Kangkong
3.Mince pork
4.Tomato
5.Union and garlic
6.Oyster sauce
7.Then seasoning for taste (optional)
Method:
1.Fry the Tufo and cut into 4pcs
2.Prepare all the ingredients
3.Then heat the pan
4.Put butter or oil
5.Then put the garlic and union
6.Then tomato
7.Next mince pork
8.Cover for 2minuts
9.The put the kangkong
10.Put the Oyster sauce and seasoning
11.Cover for 1 minute
12.Last put the Tufo and food is ready

@anlizapasaje1234 wow, what a wonderful dinner😍 actually I'm not familiar with tofu since it's not common or Available in our province but when it comes to the looks, it looks delicious and kangkong leaves are my favorite ❤❤☺

Tufo is the taho when it fresh when become old its call tufo, and yes its so yummy the combination is perfect.

Yah, and so yummy as well my husband and kids enjoyed it, try it kangkong itself already nice fry tufo itself also nice dip with nice sauce, how much more combine together.

Mostly in Philippines only in Luzon part have this they call it Takwa, usually Tagalog people they love to have fry tufo while drinking alcohol or beer. If you heard the taho when the taho become old like few days it become tufo or tokwa.

It is a healthy dish. Thanks for sharing! Without pork or other type of meat, this is a delicious dish that vegans also enjoy having. I haven't tried tofu with water spinach, but I am sure I would love it. It's easy to prepare and doesn't cost much. Yum!

Tofu is a good filler food it adds more to the dish you are making, I love kangkong specially if it cooked like you did 😁
