Time is precious
Lately, I've noticed that almost every day around 4 o'clock more or less, I start to get more uncomfortable with my back because I work in the coldest room of the house. You'd say move your desk, great idea but it's not possible logistically with the cats to keep my stuff safe from them at night. Therefore I protect myself with another layer of clothes, which helps most of the day. But whenever I sit here a bit longer, I start to notice a decline in my abilities to do whatever is needed.
Morning tasks
The best solution to avoid not being left with all tasks is to just accept winter time means sunny outside but cold in the rooms without sun on the window, therefore just adjust your schedule to this. So I did. I decided to find some new recipes that are either easy to prep in the morning or around noon for lunch (and something dinner too) or quick dishes that just take a little bit of time and effort to get on the table.
I love meal salads
Honestly, I often go for similar combinations when I prep a meal salad but we were clueless what to eat a week ago and stood in the supermarket, staring at the salad shelve. Normally I never buy anything salad pre packed, it's just a waste of money imo and I can do much better myself, but that evening, we took home a bowl with fusilli and some tomatoes, lettuce and other things. Nothing special, just easy because the pasta was already cooked. I don't mind eating that cold, I actually like that.
Leftover steak
We had a bit of leftover steak, already cut in smaller pieces for the table grill but we didn't feel like eating that a third time. Instead we quickly baked these, added a pot of white small asparagus to the salad bowl and I decided to add some walnuts myself. That was delish!
So without counting the time to cook the pasta, it seriously doesn't take long to prep this and this simple combination with some pepper and salt added is a YES for me.
It's our new favourite quick dish. It's not even expensive even though it has steak in it because we can eat twice from one pack so it's really not an expensive salad either. Win-win!
This week's menu
It was about time that I put some order into the chaos of meal planning again. It's the same time every winter, more trouble from the colder temperature inside, and it affects my mood and ability to do much during the day. I solve it by warming up on the balcony every hour or so, lol. But to make sure I get to the meal prepping in the mornings, I ordered a week's worth of food more or less so that I can prep two things and combine some stuff, without it going to waste. It actually saves time and money over going to the store every other day or so.
Leftovers
Sadly the supermarket messed up today's groceries big time so now I have to wait two days before they come to replace most of the meat I ordered (they delivered meat close to consumption date). Today we will just finish yesterday's meat balls and throw a salad together with the veggies that we have.
Tomorrow I shall start prepping some spaghetti and falafel if thing goes as planned. I've been craving falafel for a while now, let's hope they turn out great!
