Very interesting. Are the anchovies fermented? We have a similar condiment, but it's made from fermented shrimps; it's called kasam senik. It's sour and salty, but eating it is an acquired taste because it smells 😅

Here we have a regular vendor who sells anchovies not very salty, many people buy from her because they are not salty. Because she put a mixture of sugar in the tub .

Yes your welcome, That's why we're been a regular vendor since we were siblings.. In high school my mom used to buy until i had my own family so i always buy from her.
