That all looks so good... The omelet looks fantastic with that beef sauce on top. I usually top mine with green chilis, picked that habit up in the southwest! The dip and the cheese balls both look really good. What a selection you had to choose from!

Hatch grows some awesome green chili, I've been there several times. They have a great restaurant called Sparky's, lots of great BBQ and green chili items!
It's a really small town surrounded by farmland right up to the Rio Grande on the east. The river is dry now almost all year long except during irrigation season.
