Today I made a simple but nutritious veggie plantain hash for my daughter. She refused to eat what was prepared at home and insisted she wanted some plantain, so I decided to do something different for her instead. The combination of plantain and veggies makes the food a balanced diet filled with essential nutrients, fiber, and antioxidants, providing a wholesome and nutritious meal that supports overall health and well-being.
Ingredients
2 ripe plantains
3 Scotch bonnet peppers
1 medium size onion
1 carrot
1 clove of garlic
5g of peas
500ml of vegetable oil
1 spring onion
Salt to taste
Preparation
I started by rinsing my plantain, and chopping them into smaller piece.
Then I went ahead to rinse my carrot, chopped it
I also rinsed and chopped my peppers, garlic, spring onion
After that I placed a pan on a medium heat with oil and fried my plantain, until it was gotten brown.
Then I removed them from the oil
After I reduced the oil, and was left with two spoons of oil.
Then I added my veggies to it
After that I added a pinch of salt to the veggies, then I added my already fried plantains and stir. Allowed it for few seconds , before turning off the fire
Food is ready 🤤
