Roasted plantains with local sauce

Roasting plantain became my favorite hobby in the village lol, it was so fun how I would make fire get the plantain peels of f and set the plantains on roast while preparing the sauce alongside.!

This meal is known as a popular local food in Nigeria, thus one is popularly know as Bole, and it is always served with fish but I have skipped the fish part in order to keep it all vegan. There are other things that are put to roast too like yam, cocoyam and potatoes.

When plantain is roasted it gives a very unique flavor that is just so delightful. Here in this post I'll share with you how I was able to roast my plantains as well as prepare the local sauce for it.
Here are the few ingredients I used to make this:

1 cooking spoon palm oil

  • 4 chili pepper
  • 4 plantains
  • 2 fresh tomatoes
  • 1 handful of dried onion (fresh onions is best for this)
  • Scent leave to taste

After I got my fire ready, I removed the plantain peels and set it aside. I usually do this roasting whenever we finished cooking a main meal with the firewoods so with the little heat now the plantain will gently roast, it doesn't need more fire.

So it is expected to turn golden brown and we always scrape off any side that is burnt black when it's done.

So below is how it turns out when it is well roasted, looking very nice right? Hehe yes!

This local sauce below is the best company for this roasted plantains. I was heating it up alongside the plantains.

Here's how the sauce is made, I poured in the red oil in a steel plate, there I added the onions, pepper (ground) salt and scent leaves (sliced) to it and stir. I then put it to heat up too, just for it tk be a little warm and it is ready!

So finally my plantains were ready and I served it like below:

Roasting plantains is easy but not as easy as it looks or sounds , if you don't control the fire only the back will turn brown and the inside will not be done well. And to talk of the smoke from the firewood, so it's a but complicated but it is fun when you're able to achieve it

By the way, an alternative to firewood for making this plantain would be using an oven, but I tell you that you get the best experience using firewood, but if you do try it with your oven, let me know how it turned out, simply preheat your oven, peel the plantains and bake until.softened or slightly brown .
