Hello friends, welcome to my blog. It's the weekend and of course a great time to get busy in the kitchen, cooking up something nice and delicious for the family. I'm not left out on this weekend ritual, and today I'll be sharing with you how I made a mouthwatering yam porridge with vegetable.
Yam is a staple food here in my region. It forms a significant part of our diet and you can hardly find it missing in any Nigerian home. For some, yams come first, and they can eat it any day any time.
Call yam a nutritional powerhouse, and you won't be wrong. Yams are rich in carbohydrates, which provide energy for the body, including vitamins, fiber, and some minerals.
Yams can be prepared in a variety of ways like;
Fried or boiled and served with vegetable sauce.
Boiled or roasted and served with palm oil sauce.
Yam porridge with or without vegetables etc.
My favorite in all of these is yam porridge with vegetablebecause not only is it a complete balanced diet, it contains the essential nutrients which the body needs to function well. In addition to the nutrients found in yams, the ingredients used in the preparation also have a lot they offer. For example, two of the ingredients - Aidan fruit and Ugu (pumpkin leaves) are rich in antioxidant and dietary fiber, which is an important nutrient that aids digestion.
This meal is suitable for the young and old alike. It can serve as breakfast, lunch or even dinner.
Without much adọ, let's get down to the business of the day.
Ingredients
500g of yam., already peeled and washed.
50ml of palm oil.
1/2 of medium sized aidan fruit.
I medium sized onion bulb.
1 tablespoon of grounded pepper.
1/2 tablespoon of salt.
500 ml of water
- 10 leaves of Ugu (pumpkin vegetable). I got mine fresh from the garden.😅
Time To Cook
- To the cooking pot, add the yams, salt and water. Wash the aidan fruit and add too. Then cover the lid and allow to cook for about 15 minutes.
Prep other ingredients.
Peel the onion, wash and chop or dice, then set aside.
Wash the vegetables properly and cut.
By now the yam should be cooked.**
Add onion.
- Add pepper, stir, and allow to cook for about 3 minutes.
- Next is palm oil. Let it cook for another 5 minutes.
- Finally add the vegetable and stir.
Here you can turn the heat off and continue stirring until all the ingredients mix well to form porridge. Cover the lid and allow to simmer for about 2 minutes. Ensure you don't overcook the vegetables to avoid loss of nutrients. I love them fresh.
