The advent of creative Sunday has showcased the raw talent of hivers, mainly the hive learners community members.
Initially skeptical about this day because I don't know what to present, I found interest and love for cooking.
Last week, I shared a recipe of how I made pancakes and I covered it with a spiced pepper sauce.
This week, I want to share how I prepared a delicious okra soup and eba with limited resources and ingredients.
I started by gathering everything I needed for the soup which includes okra which is the main ingredient, vegetable (ugwu leaves), palm oil stock fish, ice fish, seasoning like maggi, salt, pepper and kitchen glory, garri (cassava parfait) and water.
I cut my okra and vegetable into tiny pieces
Next, I boiled the fish and stock fish with a little seasoning
I placed a dry pot on fire and added the palm oil
I added the stock fish and fried for a few seconds
I added the okra to fry then I added the water from the fish
I allowed to steam
I spiced it up, then added some water.
I added my fish and allowed to boiled for some time
Next, I added the vegetable, stirred and allowed to boil.
After about 10 seconds, I brought down the soup from the fire as it was ready for consumption.
HOW I MADE EBA
I poured water into a kettle and placed on fire to boil
I poured the boiled water into a container
I added the cassava parfait to reach he level of the water.
I turned the parfait inside the water until a solid texture was achieved. A little bit more solid than a mashed potato.
After that, I dished the eba in a flat plate and scooped the soup ready to be served.
These are the process I followed in other to achieve this dish.
