Welcome to another wonderful episode of Creative Sunday, a place where we share our creative talents, and today I will be sharing with us the making process of my favorite meal as a child, and guess what, it still Is.

It's not other than waterleadad porridge, also known as "ekpang" in my local dialect, what I love about this meal the most is its sumptuous taste, if you are looking out for that meal that every flavor comes alive on your taste bud, look no further than water yam porridge, no wonder it has my heart captivated for three decades now, another amazing thing I love making this meal is how cost-efficient it is, especially with the current inflation, which has most people sacrificing healthy diet for junk, all ingredients used in making ater yam porridge are very affordable as you will see, and doesn't require you breaking the bank, apart from that, it is very filling, so it is all in on package, nutrient filled, you can refer to water yam porridge as a balanced diet.
Without further ado, let's get down to the making process, starting with the
Water yan porridge Recipe
- Water yam
- Smoked fish(you can use other protein sources of your choice, meat, cow skin, fresh fish etc)
- Crayfish
- Periwinkle
- pepper
- Seasoning
- Salt
- Palm oil
- Scent/Basil leaf etc
Cooking Process
I added 2 cups of water into the pot to boil, the measurement depends on the quantity of water yam
Next, I washed all the ingredients, also blended the crayfish, and added all into the pot of boiling water,
- It is better to prepare ingredients before you start cooking, I peeled and cut the water yam into big chunks before grating or you could use a blender, but I prefer my local method, lol
- When the pot of water with the ingredients starts boiling, You can begin adding the blended water yam can in small balls, this is to make sure that it cooks evenly and properly, after which you cover the pot for about 6 minutes and let it cook.
- Check and make sure the water yam is cooked, then finally add the sliced scent leaf and palm oil alongside, stir well to make sure the ingredients are evenly distributed to all corners. You can now cover the pot and switch off the gas let it simmer for a few minutes before you serve.
