


Today I am joining the Creative Sunday initiative and I want to share once again with all of you in this wonderful community. This time, I bring you a delicious recipe: pancakes flavoured with pumpkin and ripe bananas. These two vegetables together provide us with well-being due to their high content of vitamins, antioxidants, fibre and potassium. We loved their exquisite taste; they are ideal and so healthy that they are perfect for any time of the day.
Without further ado, here are the ingredients and the step-by-step:

-272 grams of pumpkin or squash
-6 cups of water for boiling the vegetables
-1 ripe plantain
-2 eggs
-2 cups of leavened wheat flour
-1 tablespoon baking powder
-1 cup of liquid milk
-1 teaspoon salt
-1 teaspoon cinnamon powder
-3 tablespoons sugar
-1 tablespoon vanilla essence
-Butter to grease the frying pan
-Cinnamon stick
𝐏𝐫𝐞𝐩𝐚𝐫𝐚𝐭𝐢𝐨𝐧: 𝕊𝕖𝕡𝕥 𝕓𝕪 𝕤𝕥𝕖𝕡:
- To start the preparation, wash the pumpkin, peel it and cut it into small pieces.

- Next, cut the ripe banana in two, remove the skin and cut into rounds.
- Add the chunks of pumpkin and the ripe plantains to a pot, add water and a cinnamon stick. Cook over high heat until they soften and the cinnamon flavour is concentrated.

- After checking that both vegetables have softened, remove the cinnamon stick and continue with the preparation. Place the pumpkin and ripe plantain pieces in the blender.



- Add the eggs and blend in the blender on high speed until these ingredients are well combined.


- Add the liquid milk, together with the wheat flour, baking powder and cinnamon powder, shake the mixer and mix on high speed.
- Turn off the blender and then add the sugar, followed by the salt. We turn it on again until they are integrated.

- Finally, add the vanilla essence. Continue whisking and transfer the mixture to a bowl. Then turn on the cooker, place the frying pan on the stove and grease it with butter. With a ladle, pour a portion of the mixture to start with our pancakes.


- Once we have prepared each of our pancakes, we place them on the plate and enjoy these delicious and nutritious pumpkin and ripe banana pancakes.
