Today, I decided to treat myself to a culinary experiment by making some delightful semolina sweets. I carefully roasted the semolina until it turned golden and aromatic, then added sugar, milk, and a touch of ghee to create a rich, creamy mixture. The result was a batch of warm, melt-in-your-mouth sweets that made the effort well worth it.This is a recipe close to my heart, and I’m excited to share it with you. The best part? It’s simple, quick, and absolutely delightful!
Ingredients ;
Samolina -1 cup
Sugar - 1 cup
Ghee - 1/2 cup
Dry fruits - 1/2 cup
Method
Heat 2 tablespoons of ghee in a pan over medium heat.add the samolina and roast it on low to medium heat. Keep stirring continuously until the samolina turns golden brown and emits a fragrant aroma.
Preparing the Sweet Mixture:
In a separate pan, melt the ghee. Then, add 2 green cardamom pods, followed by the sugar, and pour in some water.
Now, prepare a one-string consistency syrup.Mix in some yellow food color into the syrup.And add cut dry fruits.
Slowly add the roasted semolina, stirring constantly to avoid lumps.Continue to cook on low heat until the semolina absorbs the sugar syrup and thickens.
Cook for a few more minutes until the mixture starts leaving the sides of the pan.
Cook for another 2 minutes, then turn off the heat.
Let the mixture cool slightly.Once cool enough to handle, shape the mixture into small balls (laddoos) or flatten it in a greased tray and cut into squares or diamonds.
Allow the sweets to cool completely before serving. They can be stored in an airtight container for up to a week.
These samolina sweets are now ready to be enjoyed! Whether you’re having them with your evening tea or serving them to guests, they’re sure to be a hit. The combination of the rich, nutty flavor of roasted samolina with the sweetness of sugar and the aroma of cardamom is simply irresistible.
