Every once in a while I cave in to the simple demands of my kids to cook their favorite meal which is Crispy Chicken Fingers. They devour these with so much gusto that I feel so appreciated. They can consume considerable amount of food when I whip this dish up.
It’s a busy a Tuesday morning for all us stay-at-home Mamas, one of the highlight of my day is preparing lunch for the kids. So every lunchbreak my daughter and nephew comes home from school, my husband’s brother brings them home and since we are neighbors and he has work too I am tasked with preparing our lunch. With all the activities they have at school I am sure that they have already worked up an appetite. So, as a surprise I finally caved in to their request to make this delicious meal. I increased the usual amount of rice I cook because I am certain that their appetite will be big for this.
So for all of you who wants to know how I made this meal. I will be laying out everything. From the ingredients to all the steps and procedures until we show our finished output. Also please read along my commentaries and backstories in here. So buckle up!
First I will lay out all the ingredients. Whenever I do something I make sure that everything I need is at the ready and laid out. So as you can see on the picture I poured out all the things I will need. Ingredients are: all purpose flour, 1 egg, bread crumbs, and of course our chicken. Since my husband and I wake up early about 5 in the morning, to get our daughter ready for school I asked him to cut and marinate the chicken that I bought at the market last Sunday. So for this meal he marinated about half a kilo of chicken breast with salt, pepper, seasoning and calamansi (you can use lime or lemon). My hubby does not use measuring tools for this, he just goes with it until he is satisfied. Trial and error method.
I threw it in the fridge and let the meat marinate for a few hours. After my daughter and husband had gone for school and work it was time to do some tidying up in the house. Dishes are done, tables are cleared, I threw out some old and broken toys so to minimize the clutter. My children’s toy boxes are already full and over spilling. A lot of the toys are already broken but they just do not want to throw them out so I secretly throw a little at a time so they won’t notice. After that I did a little reading activity with my little boy. After tidying up me and my son bathed and ate some snacks. After a few minutes playing with him, I started with my meal preparation.
Ingredients are out and ready. I keep the flour and bread crumbs open and at hand so that If I run out I could easily pour more on the containers. I also used a glove because it is quite messy and sticky.
So First things first, I coat the meat in all purpose flour. Making sure that everything is covered with it. After that tap on it to remove excess flour.
Next step is dipping it completely in the egg. Make sure that every part is dipped. Pick up the meat one by one and lay it on the plate of breadcrumbs. After coating it completely I give it a little press so that when I fry it, it will not come off easily.
I still have some left over marinated meat, I will be using that for next time. See how many I made with these? Now I let it sit in the fridge for 20 minutes because if I cook it too early it will not be as crispy anymore.
While waiting, my son got bored playing and requested to watch a movie so I opened the TV and put on Ratchet and Clyde movie. We do not have cable because we seldom use it. Since having internet access we no longer need TV as we can watch in our cellphones. We have a Hard drive full of movies to watch so I picked the movie and watched with him for a little while.
Time for waiting is done! It is frying time. I heat up the pan and added the oil. When the oil got hot I reduced the flames to low fire. Cooking this only takes up a few minutes so be careful not to use high heat and don’t let them cook in the pan for long time. More importantly do not leave them. Make sure not to overcrowd the pan so that the texture will be really crispy. Let them cook until the meat is golden brown.
Here is the finished product. My Crispy Chicken Fingers, they are so delicious even I crave them a lot of times but of course since we want to eat healthier foods we limit fried stuff. Unfortunately, the time got away from me I did not have time to cook a vegetable for another dish. As a remedy I will be cutting up some of these fruits to serve as their fiber source. The three kids who are going to eat this dish likes different sauce so it is up to you what you prefer. My daughter like to dip in plain mayo, my son likes cheese whiz, and my nephew likes mayo.
You can enjoy this food when you have picnics, instead of buying chicken tenders that costs so much. A kilogram of chicken breast can feed about more than a dozen people. You can make your tartar sauce if you do not like any of the dips I have mentioned.
