Namaste!
Here HBD stands for Happy Birthday 😎
A week ago, on July 17, it was my Birthday; the next day, July 18, it was my wife's. Now since our birthdays come one after the other, we celebrate these 2 days like a festival every year. 😊
A festival for which preparations begin several days in advance. What will be done throughout the day, what will be special for breakfast, what will be cooked for dinner, drinks, etc. Because both of us like our comfort and homemade food, we mostly choose to stay at home.
So this time for my birthday we decided to have chocolate cake, pizza and some drinks and for her birthday she got to rest for the whole day and dinner was prepared by me.
Now my kitchen day starts here..
I asked my wife what she wants so that I could cook her something of her choice but I had confidence in myself that I could cook anything and she had confidence in me that I couldn't cook everything. LOL!
I will get food tonight, right? As she said this, I could clearly see fear, confusion, restlessness, and many other reflections in her eyes.
Come on, don't react like this. I have made good food earlier as well. I outragedly said this.
Yes but all that was basic roti sabji (bread curry) Again mixed emotions in her eyes. As if she is telling me that today we should order it from outside.
Ok fine, don't tell me, I'll make something super tasty for you. I told her all this with a twinkle in my eyes and a smile on my face. 😊
Okay, but I won't be in the kitchen today and I also want good food. Saying this she left from there indignantly.
Now I had to decide what to cook for dinner and I chose a difficult task.
My wife loves Tandoori Roti, Naan and food with good spices, so based on the ingredients available at home, I decided to make Garlic Paneer and Tandoori Roti.
Ingredients
2 big tomato
equal onions
5-8 garlic clove
Coriander
Kashmiri red chilli powder
a few green chillies
2 tablespoons vegetable oil
half teaspoon salt
1/4 teaspoon coriander powder
1/4 cumin
1/4 teaspoon turmeric powder
Let me tell you in advance that I am not multitasking. I tried to record the entire process but still, some things did not work out properly.
Like in the picture shown below, I forgot to take a photo putting all the ingredients together.
First of all, I made a paste by grinding green coriander, garlic, Kashmiri red chilli powder, 1 tomato, some salt and water together in a mixer.
After this, I chopped onion, tomato and green chilli finely. I know it's not called finely chopped but I couldn't do any better than this.
After this, I added 2 tablespoons of vegetable oil to the pan added 1/4 teaspoon of cumin seeds and waited until the bubbles in the oil were almost gone.
After which I added chopped onion and saute it on medium to low flame until it became slightly golden.
After this, I added a chopped tomato to it and added all the other spices and salt as per our taste.
Mixed all of this well then added our ground paste.
Saute on a medium flame until it turns fragrant but not overcooked otherwise the garlic turns bitter.
While our gravy was cooking I took the paneer and cut it into small pieces.
Added diced paneer into the gravy and gently mixed it well.
Since I had kept my gravy a little liquid beforehand, the paneer mixed well in it. Now I just had to cook it on low flame for 5 to 7 minutes.
After which all the extra water had disappeared and this super tasty Garlic Paneer was ready. I tasted it and it was really amazing. And the good thing is that for whom it was cooked also found this surprise very tasty.

These are some photos of that tandoori roti. Actually, I was too busy while making tandoori roti (Bread), so I could not take pictures of all its steps also while taking this picture of the griddle, one of my fingers got burnt, So I will explain the art of making tandoori roti on the griddle at home some other time. 😋
I hope you liked my cooking! ;)
