Hoy vengo a compartir con ustedes una receta que acá donde vivo es bastante familiar, Tilapia en salsa. Comérse un salmón o cualquier otro buen pescado en Cuba, es casi una utopía, un lujo que no todos podemos darnos, así que no queda más remedio que comer "casabe por falta de pan". A mí me encanta el pescado y los demás productos que vienen del mar, sobretodo el pulpo, el calamar, la langosta y el camarón, que es mi favorito. Ya se que tengo gustos de millonaria, pero qué puedo hacer.

Today I'm here to share a recipe that is quite common where I live: Tilapia in sauce. Eating salmon or any other good fish in Cuba is a utopia, a luxury not everyone can afford, so we have no choice but to "eat cassava for lack of bread." I love fish and other products from the sea, especially octopus, squid, lobster, and shrimp, which is my favorite. I know I have expensive tastes, but what can I do.

Sometimes,my son goes fishing with his friends to a small river near our house and, if he's lucky, manages to catch some tilapia and even a catfish. Yesterday he brought 7 small tilapia, and I, without hesitation, after he cleaned them, got right to work. I remember when I was little,I always heard that you had to eat a lot of fish to do well in school, because fish has phosphorus which is very good for an excellent memory.

Tilapia is a freshwater fish native to Africa but farmed worldwide due to its rapid growth and adaptability. In Cuba, they are abundant. Initially, when they were introduced here, they were raised in ponds but later proliferated in rivers and reservoirs. It's a very popular source of protein. This fish feeds on plants, is low in fat, and contains vitamins like B12 and minerals like phosphorus and selenium, making it a healthy, accessible, and above all, economical option.


Tilapia is very tasty, but to eat it you need 20/20 vision 🤭 because it has many very small bones. This can be a risk, therefore, it must be eaten very carefully; nobody wants to end up in an operating room to have a bone removed from their esophagus 🤭. This fish can also be prepared fried, breaded, in fillets, and in other ways. It's a light food and very popular among the humble population.

- Pescado, sal, limón, vino seco, pimienta negra, sazón completo, aceite, y agua. (El limón puede ser sustituto por vinagre o naranja agria, también puedes echarle puré de tomate si lo tuvieras).
OJO (Una aclaración necesaria): lo ideal para cocinar este y cualquier otro plato siempre serán las especias naturales, dígase ajo, cebolla, ají, comino, curry y otros, pero lo que tengo a mano en estos momentos es sazón completo y es lo que uso.
☀️ To prepare this dish you need the following INGREDIENTS:
· Fish, salt, lemon, dry white wine, black pepper, complete seasoning, oil, and water. (The lemon can be substituted with vinegar or sour orange, you can also add tomato puree if you have it).
NOTE(A necessary clarification): The ideal for cooking this and any other dish will always be natural spices, meaning garlic, onion, chili pepper, cumin, curry, and others, but what I have on hand right now is complete seasoning, and that's what I'm using.


- 7 tilapias pequeñas (2 libras), un limón, una cucharada rasa de sal, 2 cucharadas de aceite, sazón completo y pimienta al gusto.
☀️ MEASUREMENTS:
· 7 small tilapia (2 pounds), one lemon, one level tablespoon of salt, 2 tablespoons of oil, complete seasoning and pepper to taste.


Limpiar y descamar el pescado.
Hacerle pequeños cortes arriba para que se cocine mejor.
Colocar en una sartén con el aceite y agregar los ingredientes. (Si no estás muy apurado lo puedes dejar con los ingredientes en reposo durante un rato, de esta forma se fijan más los sabores)
OJO: Mucho cuidado y no dejar caer una semilla de limón en la sartén porque masticarla es muy desagradable, es por eso que usé un pequeño colador.
☀️PREPARATION:
· Clean and scale the fish.
· Make small cuts on top so it cooks better.
· Place in a pan with the oil and add the ingredients. (If you're not in a big hurry, you can let it marinate with the ingredients for a while; this way the flavors are absorbed better).
NOTE:Be very careful not to let a lemon seed fall into the pan because chewing on it is very unpleasant, which is why I used a small strainer.



Dejar hervir y cocinar hasta que se haga una salsa semi líquida.
Retirar del fogón y a degustar.
· Cover with water and put the lid on.
· Let it boil and cook until a semi-liquid sauce forms.
· Remove from the heat and enjoy.
