Happy evening friends of this beautiful community, I hope you have had a nice day full of good vibes and positive energy, day by day I spend it looking for recipes with little or no fat and low in salt to accompany my meals or for my meals, It is not easy to change the way of eating but if health deserves it you have to do it, before the ideal pasta for me was with margarine, mayonnaise and tomato sauce but that has changed and although I only eat it once a week I am looking for healthy sauces and today I made a carrot sauce, without further ado I will go to the ingredients and the step by step.
750 grs de coditos
1 rama de cebollin
1 ramita de celery
1 ramita de cilantro
Albahaca fresca
1 cebolla
9 ajies
2 dientes de ajo
1 zanahoria
1/4 de taza de pasta de tomate
1 taza de agua
2 cucharadas de aceite
Cúrcuma al gusto
1 cucharadita de Sal
Pimienta al gusto
Orégano
Queso (opcional)
750 grams of elbows

1 sprig of celery
1 sprig of cilantro
Fresh basil

9 chilies
2 cloves garlic
1 carrot
1/4 cup tomato paste
1 cup of water
2 tablespoons of oil
Turmeric to taste

Para empezar lavo bien todos los ingredientes para eliminar impurezas, pico primero los montes(celery, cilantro y cebollin) el tamaño es a gusto por que eso después se va a licuar, pico las hojas de albahaca.
To start I wash all the ingredients well to remove impurities, I first chop the mounts (celery, cilantro and chives) the size is to taste because that is then going to be liquefied, I chop the basil leaves.
Pico los ajies a la mitad, le saco las semillas y los pico, pelo los dientes de ajo y los picos, igual la cebolla y por último pelo y pico la zanahoria.
I cut the peppers in half, remove the seeds and chop them, peel the garlic cloves and chop them, peel the onion and finally peel and chop the carrot.
Pongo un bolw a la candela y cuando se caliente le echo dos cucharadas de aceite.

Echo todo los ingredientes y mezclo bien, le echo la cúrcuma, la sal, la pimienta y el oregano, mezclo bien y dejo sofreir por 5 minutos, luego le agrego la pasta de tomate y vuelvo a mezclar, cocino por 2 minutos más y le agrego la taza de agua, vuelvo a mezclar y tapo, dejo cocinar por 15 minutos, destapo rectifico el sabor y veo si esta floja la zanahoria, como ya esta lista la tapo, apago la candela y la dejo reposar mientras cocino los coditos.
I add all the ingredients and mix well, I add the turmeric, salt, pepper and oregano, mix well and let it sauté for 5 minutes, then I add the tomato paste and mix again, I cook for 2 more minutes and add the cup of water, I mix again and cover, let it cook for 15 minutes, uncover, check the taste and see if the carrot is loose, as it is ready I cover it, turn off the candle and let it rest while I cook the elbows.
Cuando los coditos estaban casi listo, eche la salsa en la licuadora y licue a toda velocidad para que quedara bien licuada y le agregue un poquito más de pimienta, saque mi parte de codito sin margarina, le eche salsa y queso rayado y a la otra parte le puse margarina y salsa, mis nietos y mi esposo comieron y dijeron que estaba muy rica.
When the coditos were almost ready, I threw the sauce in the blender and blended it at full speed to make it smooth and added a little more pepper, I took out my part of the codito without margarine, added sauce and grated cheese and the other part I added margarine and sauce, my grandchildren and my husband ate it and said it was very tasty.
