Hi everyone! This year has presented me with numerous opportunities, and one of the most exciting ones has just emerged. Each farming season tells its own story, and this year's narrative has been particularly rewarding, thanks to the success of my maize harvest.
After months of hard work, stress, and perseverance, the golden cobs have finally made their way from the farm to my home. However, the work doesn’t stop here; there is still much to do to ensure that the harvest is properly cared for.
Sun-Drying the Maize 🌞
While modern drying methods like mechanical drying exist, sun-drying—an ancient method—remains one of the most effective techniques for drying our harvest.
Sun-drying is a cost-effective and sustainable way to dry farm produce. It utilizes nature's abundant resources available year-round. In regions like Africa, where temperatures can be extremely hot, sun-drying is highly effective.
This traditional method has been passed down through generations. While there are other traditional techniques, such as smoking and salting, sun-drying has proven to be the most successful.
It is essential to note that while sun-drying is effective for grains, when using it for tubers, they must be sliced before drying, as we do with cassava and yam flakes.
As I watch the maize cobs cool and dry, I’m already making plans for how to store them for the next few months.
