Steamed chicken with potatoes and Chinese taro is usually a great option for a healthy and delicious lunch.   • 1/2 chicken breast
  • 1 potato
  • 1 Chinese taro
  • 1 onion
  • 5 sweet peppers
  • Pinch of salt
  • 3 cups of water

Preparation:

I washed the herbs and vegetables, removed the seeds from the bell peppers, and made sure none of them were spicy. Then I peeled the onion. I chopped these ingredients into small pieces. Next, I peeled the potatoes and cut them into medium-sized pieces.

Next, in a pot, I added the herbs along with a dash of oil and stirred well. After ten minutes, I added the potatoes and the chicken breast cut into strips. I turned the heat down to medium, added a pinch of salt, and covered the pot. The steam would help with cooking and concentrate the flavors. In fifteen minutes, everything was ready.

When the Chinese yam has a moist rind, it tends to cause a very unpleasant itching sensation on the hands and arms when handled; therefore, special care must be taken, which is why it is necessary to use cream, oil, or even gloves for protection. After taking these precautions, remove the rind and cut the yam into pieces. Next, place three cups of water and a pinch of salt in a pot and bring to a boil. They were tender in twenty minutes.

I chose not to cook everything together as a precaution; on very rare occasions, I’ve noticed that this variety of Chinese taro can alter the flavor of meals, and since I have a young child at home, I need to be careful.

Next, I served my chicken with vegetables, which was delicious. The potatoes and Chinese taro were really good. So I enjoyed a delicious and light lunch.

El pollo al vapor con papas y ocumo chino suele ser una buena alternativa para un almuerzo saludable y delicioso. En mi caso particular, los ingredientes que tenía a mano presentaban ciertas particularidades, la pechuga del pollo suele ser la parte que requiere mayor atención para darle sabor, en tanto el ocumo chino era de corteza "charco", lo que es una advertencia porque puede causar picor. Veamos cómo resolví estos detalles.

Ingredientes:

  • 1/2 pechuga de pollo
  • 1 papa
  • 1 ocumo chino
  • 1 cebolla
  • 5 ajíes dulces
  • Pizca de sal
  • 3 tazas de agua

Preparación:

Lavé los aliños y las verduras, retiré las semillas de los ajíes dulces y me cercioré que ninguno fuera picante. Luego quité la concha de la cebolla. Corté en trozos pequeños estos ingredientes. Después retiré las conchas de la papa y corté en trozos medianos.

Posteriormente, en una olla, añadí los aliños junto a un toque de aceite, removí muy bien. Después de diez minutos agregué las papas y los pedazos de pechuga cortada en tiras. Ajusté el fuego a la mitad, agregué un punto de sal y tapé. El vapor ayudaría a la cocción y a concentrar los sabores. En quince minutos todo estuvo listo.

Cuando el ocumo chino es de corteza charcosa, es decir húmeda, suele causar un picor muy desagradable en manos y brazos al manipularlo, por tanto, hay que tener especial cuidado, de allí que sea necesario usar crema, aceite o incluso guantes como protección. Luego de tomar estas medidas se quita la corteza y se divide en pedazos. Posteriormente, en una olla se colocan tres tazas de agua, un punto de sal y se procede a sancochar. En veinte minutos estaban blandos.

Opté por no cocinar todo junto por precaución, en muy contadas ocasiones he distinguido que esta variedad de ocumo chino puede modificar el sabor de las comidas y al tener una niña pequeña en casa debo ser precavida.

Lo siguiente fue servir mi pollo con verduras, el cual estaba delicioso. La papa y el ocumo chino estaban muy buenos. Así que disfruté de un almuerzo delicioso y ligero.
