Cucumber, Carrot, Beet, and Tomato Salad (Eng/Esp)

Today I made a delicious, light salad as an appetizer. I wanted to eat some fresh vegetables and thought combining them with a little mayonnaise would be the perfect choice. Cucumbers, tomatoes, carrot and beets came together to create a very colorful and nutritious recipe.

This salad is an excellent side dish for lunch, and it can even be perfect for dinner since it comes together quickly, making it very convenient. Sometimes that’s the deciding factor when starting a recipe.

Ingredients:

  • 2 cucumbers
  • 1 tomato
  • 1 beet
  • 1 carrot
  • 1 tablespoon of mayonnaise
  • Pinch of salt
  • 1 cup of water
  • Oil

Preparation:

I washed the vegetables thoroughly. I peeled the cucumbers and beets. Then I sliced the cucumbers and diced the beets into small cubes, placed them in a pot, and added a cup of water to parboil them. About fifteen minutes was enough to soften them. I then drained the excess water using a colander and set them aside.

I handled the tomato differently: I carefully removed the seeds so as not to break it, as I wanted to keep its round shape for slicing. I also grated the carrot after peeling it.

I placed all the chopped vegetables in a deep bowl, mixed them together, and stirred in a tablespoon of mayonnaise. I continued stirring and added a pinch of salt.

I really liked the result; the cucumbers added a pleasant freshness—just what my palate needed. These vegetables went together really well; I’d never combined them before, but they exceeded my expectations, so I really enjoyed my salad.

Hoy preparé una ensalada deliciosa y ligera como aperitivo, quería comer vegetales frescos y pensé que unirlos con un poco de mayonesa sería una opción perfecta. Pepinos, tomate, zanahoria y remolacha se unieron para crear una receta muy colorida y nutritiva.

Esta ensalada es una excelente alternativa para acompañar un almuerzo, incluso puede ser perfecta para cenar dado que se realiza en poco tiempo, por tanto, es muy práctica. A veces esto en la cocina es determinante para empezar alguna preparación.

Ingredientes:

  • 2 pepinos
  • 1 tomate
  • 1 remolacha
  • 1 zanahoria
  • 1 cucharada de mayonesa
  • Pizca de sal
  • 1 taza de agua

Preparación:

Lavé los vegetales con suficiente agua. A los pepinos y a la remolacha les quité las conchas. Luego corté el primero en rodajas y la segunda en cuadros pequeños, los cuales monté en una olla y agregué una taza de agua para sancochar. Unos quince minutos fueron suficientes para que ablandaran. Luego retiré el exceso de agua con ayuda de un colador y reservé.

Con el tomate realicé un proceso diferente, pues extraje sus semillas con mucho cuidado para no romperlo, la idea era conservar su forma redonda para cortar en rodajas. También rallé la zanahoria después de desconcharla.

En un envase hondo coloqué todos los vegetales picados, allí los mezclé y unté una cucharada de mayonesa, continúe revolviendo y agregué una pizca de sal.

Me gustó mucho el resultado, los pepinos otorgaron una frescura agradable, justo lo que necesitaba mi paladar. Estos vegetales se combinaron muy bien, nunca los había juntado pero superaron mi expectativa, así que disfruté de mi ensalada.
