Today I’m going to share a recipe for a delicious and healthy lunch that’s also easy to prepare—perfect for those who don’t have much time to spend in the kitchen. So, I present to you grilled chicken served with Chinese taro and potatoes—a spectacular combination.

  • 3 chicken pieces
  • 2 Chinese taro roots
  • 6 potatoes
  • Salt to taste
  • Oil

Preparation:

Peel the Chinese taro and the potatoes, cut them into medium-sized pieces, and boil them in plenty of water with a pinch of salt. Remember to take precautions when handling Chinese taro, as there is a variety that causes an itching sensation when peeled.

Next, I washed the chicken pieces, patted them dry, and rubbed them with salt. A budare pan with a lightly oiled surface was waiting in the kitchen. I began cooking over medium heat with a lid on; the idea was to keep the pieces juicy on the inside, so I turned them constantly to prevent the moisture from evaporating completely.

Twenty minutes were enough to finish the process; I used a fork to make sure the chicken was fully cooked. With the same fork, I checked that the vegetables were ready. I drained off the excess liquid and added a little butter.

Next, I served it on a plate, and that was it—in less than an hour, I had a delicious and healthy lunch right in front of me.

Preparación:

Removí las cortezas del ocumo chino y de las papas, dividí en pedazos medianos y con suficiente agua coloqué a sancochar junto a una pizca de sal. Les recuerdo que se debe tomar precauciones al manipular el ocumo chino puesto que existe una variante que causa picor al pelarlo.

Después lavé las piezas de pollo, las escurrí y le unté sal. Un budare con la superficie ligeramente aceitada esperaba en la cocina. A fuego medio y con una tapa encima inició la cocción, la idea era que las piezas quedaran jugosas por dentro, por tal razón les di vuelta constantemente para evitar que la humedad se evaporara por completo.

Veinte minutos fueron suficientes para culminar este proceso, me cercioré con un tenedor que el pollo se había cocinado por completo. Con el mismo tenedor comprobé que las verduras estuvieran listas. Retiré el exceso de agua y unté un poco de mantequilla.

Lo siguiente fue servir en un plato y listo, en menos de una hora tenía ante mí un delicioso y saludable almuerzo.
