Cheese and Oat Empanadas (Eng/Esp)

For breakfast, I made some delicious white cheese empanadas, but I tweaked the traditional recipe by adding oat flour to the dough—a unique touch that gave them great flavor and an excellent texture, perfect for keeping them from falling apart. I also added plenty of cheese so that every bite would be a treat.

Ingredients:

  • 100 grams of corn flour
  • 50 grams of oat flour
  • 2 tablespoons of wheat flour
  • 2 tablespoons of sugar
  • Hard white cheese for grating
  • Pinch of salt
  • 2 cups of water
  • Oil

Preparation:

I placed two cups of water, the salt, sugar, and cornmeal in a bowl and mixed them thoroughly. The mixture had a rather pleasant sweetness to it.

Then I added the oat flour and continued mixing. Finally, I added the wheat flour.

The next step was to spread a portion of the dough onto a bag, grate enough cheese, and seal the empanada. I repeated this process six times. I left the edges rough so they would be crispy.

Then I heated a skillet in the kitchen with enough oil and fried the empanadas in it. They turned out golden brown, with the perfect texture for this type of dough. You could really taste the oats; I liked adding this twist as a variation on a classic recipe.

Para mi desayuno preparé unas deliciosas empanadas de queso blanco, pero modifiqué la receta tradicional agregando harina de avena a la masa, un toque único que aportó buen sabor y una excelente consistencia, perfecta para que no se rompan. Además, les agregué bastante queso para que cada mordisco fuera una delicia.

El paso siguiente fue extender una porción de la masa sobre una bolsa, rallar suficiente queso y cerrar la empanada. Repetí este procedimiento seis veces. Dejé las orillas rústicas para que quedaran crujientes.

Después monté un sartén en la cocina con suficiente aceite y allí freí las empanadas. Quedaron doradas, una textura perfecta para este tipo de masa. La avena se dejaba sentir, me gustó añadir esta novedad como una variante de una receta clásica.
