Simple Nigerian Pancake Recipe.

I hope we are all having a peaceful sunday 🥰

On this week hive learners, creative sunday, I will be sharing a simple Nigerian pancake recipe.
Pancakes are mostly eaten in the morning, it's ideal for breakfast or mid day snacks, pancake is usually paired with fruit juice , tea or any liquid of your choice.
I hope you enjoy reading through my post.

I will like to start with the list of ingredients that is required to achieve a fluffy nigerian pancake, lets get start with the ingredients I will be using:

  • Flour
  • Melted butter
  • Sugar
  • Peak milk
  • Eggs
  • Baking powder
  • Salt
  • Vegetable Oil
  • Water
  • Pepper

THE PROCESS

I will start with mixing my dry ingredients in a dry bowl, these ingredients includes : flour, sugar, baking powder, and salt.

Note : For my dry ingredients, I will be using 1cup of flour, 1/2 tablespoon of baking powder, a pinch of salt and four cubes of sugar .

Also, in a separate bowl , I will mix my wet ingredients , and these includes : properly whisked eggs, melted butter and milk in seperate bowl.

Note: For my wet ingredients, I will be using, one egg, two tablespoons of melted butter and no accurate measurements of milk.

Properly mix both wet and dry together, blend together and add 1/2cup of water to it, if it's too thick . It shouldn't be too thick and watery.

Then add your pepper, this is optional, I just want my pancakes to have a chilly taste and this what makes my pancake a delicious Nigerian pancake.
You can also add nutmeg and onions, but I won't be adding those to mine today.

After stirring, let it rest for some minutes, personally I leave mine for about 20mins, properly blend again and I start the easy frying process.
Pour into the middle of your pan, with your spoon , make sure it forms a round shape in the frying pan, leave for about 2 to 3mins on a low heat, don't flip until it changes color to light brown , then carefully flip over the the next side .
It's important you fry on low heat, to get a perfect pancake.

You really tried vanilla. Do you know you can also add veggies to it ? Green pepper,red bell pepper.
Why no measurement for milk 😀, looks good but you can reduce the amount of oil you used in greasing the pan next time bcos it's not supposed to have an oily skin, normally you wouldn't need to add oil if it's an non stick pan but I get the pan is not non stick so, just use brush or a drop of oil next time.

Your butter hmm . I prefer those sachet butter. This is mostly for spread
