Rizoma de Cúrcuma, muy conocida como la raíz de cúrcuma en las cocinas. Este rizoma es utilizado rallado, picado o en polvo para diferentes recetas y también es utilizado en Té para alguna dolencia. Es muy natural. Su aspecto físico parece un gusano, su color naranja y olor es muy fuerte, utilizarlo, manejarlo así como raíz su color queda impregnado en las manos o en los utensilios que se utilicen.
Nos regalaron estas raíces hace unas semanas, venía usándolo en la licuadora con otros aliños para no rallarlo ni picarlo.
Era una cantidad que decidí convertirlo en polvo, al ver que hasta el momento no había podido comprarlo porque de verdad me agrada mucho usarlo en las comidas por sus bondades medicinales para el organismo.

Al principio, comencé el proceso siguiendo algunas indicaciones de forma experiencial de algunas personas, me dejé llevar por la intuición hasta cierto punto como lavar y cortar los rizomas, luego si investigué un poco y esto es un proceso de deshidratación, cosa que nunca había hecho, siempre compraba el polvo y listo. Esto es lo que hacemos muchos porque la sociedad se ha encargado de poner todo al alcance de la mano, comprar y ya, ¿para qué, molestarse en realizarlo en casa?
Pensé, esto es lo que hacían las abuelitas, bisabuelas, tatarabuelas con otros recursos como los molinos de piedras, hoy día existen los molinillos eléctricos, licuadoras y otros artefactos eléctricos que se pueden utilizar.

Para realizar esta deshidratación se uso:
184 gramos de rizoma de cúrcuma
½ cucharadita de pimienta en granos
El primer paso: lavar muy bien los rizomas escogidos. Enjuagar muy bien. Cortar lo más delgado posible en rodajas, así con su piel y todo, porque estas también tienen sus bondades.

Llevarlas a la bandeja donde va a llevarse al horno.

El horno, comenzó su calentamiento por 10 minutos, la temperatura lo más baja que pueda.
Al pasar el tiempo de calentar el horno, se colocó la bandeja. El tiempo en el horno fue de dos horas aproximadamente. Otro detalle, dentro de la investigación realizada es que la puerta del horno debía quedar un poco abierta para que el agua de las raíces o rizomas se evapore y las lonjas se tuesten muy bien.
Este proceso también se puede hacer al sol como lo hacían nuestros ancestros, por comodidad decidí usar el horno.
Al retirarlas del horno se observa la reducción de las lonjas del rizoma. Se esperó que enfriaran y se llevó a cabo el proceso de convertirlas en polvo.

Usé este aparato que tengo en casa, su nombre nunca me lo aprendo, no soy de tener tantos artefactos eléctricos en casa. Este paso es paciencia, para ir procesando el rizoma, al terminar lo pasé por una coladera para ir retirando aquellos que no se molían tan fácilmente, lo que quedaba en el colador lo volví a procesar, esta vez con la pimienta en granos.

La pimienta en granos para activar la curcumina de los rizomas convertido en polvo.
La cantidad en polvo es de 40 gramos, creì que iba a ser menos cantidad, lista para utilizarla en las preparaciones de las comidas.
Una experiencia muy , pero muy gratificante.

Turmeric rhizome, also known as turmeric root in cooking. This rhizome is used grated, chopped, or powdered in various recipes and is also used in tea for certain ailments. It is very natural. Its physical appearance resembles a worm, and its color is very strong orange. When used or handled as a root, its color will permeate your hands or any utensils you use.
We were given these roots a few weeks ago. I had been using them in the blender with other seasonings to avoid grating or chopping them. Since there was a large quantity, I decided to grind it into a powder, as I hadn't been able to buy it yet because I really enjoy using it in cooking for its medicinal benefits.
At first, I started the process following some people's experience and letting my intuition guide me to a certain extent, like washing and cutting the rhizomes. Then I did some research and discovered that this is a dehydration process, something I had never done before. I always just bought the powder and that was it. This is what many of us do because society has made everything readily available: buy it and that's it. Why bother doing it at home?
I thought, this is what grandmothers, great-grandmothers, and great-great-grandmothers did with other resources like stone mills. Nowadays, there are electric grinders, blenders, and other electrical appliances that can be used.
To perform this dehydration, I used:
184 grams of turmeric rhizome
½ teaspoon of peppercorns
The first step: Wash the chosen rhizomes very well. Rinse thoroughly. Slice them as thinly as possible, including the skin, because it also has its benefits.
Place them on the baking tray.
The oven preheated for 10 minutes at the lowest possible temperature.
Once the oven was preheated, the tray was placed inside. The drying time was approximately two hours. Another detail from my research is that the oven door should be slightly ajar to allow the water from the roots or rhizomes to evaporate and the slices to toast thoroughly.
This process can also be done in the sun, as our ancestors did, but for convenience, I decided to use the oven.
Upon removing them from the oven, the reduction of the rhizome slices was noticeable. They were allowed to cool, and then the process of grinding them into powder was carried out.
I used this appliance I have at home; I never remember its name, as I don't have many electrical gadgets. This step requires patience to process the rhizome. Once finished, I passed it through a sieve to remove the parts that didn't grind easily. What remained in the sieve was then processed again, this time with the peppercorns.
The peppercorns activate the curcumin in the rhizomes, which are now powdered.
