Me Time, Happy Time

No Carb Me-Time😄

Hello Hivians of #HivePH! I am Nicole, a newbie around Hive. I am subscribed in this community for weeks now but it is my first time to post here. I hope that my simple joy write-up is suitable for a share. Pardon me if it is too short this time.

One thing a mom enjoys and considered a grand simple-pleasure is when she is alone and on her own. No one calls her, no asks her where is this and that, no one reports to her who touches who, and no one wants to know what is the next menu. When I am alone, the kitchen is quiet. And I have the time to do things whatever I want to do. Since it is now time for dinner and teens hang out with their friends for several hours, I have the best time in the world. Hahaha, please allow me to laugh on my own 😂😂😂. My post this time is not that much but just a quick thought of what I wanted to eat in a short while. Just a serving of protein and fiber on the side is enough. No one will pressure me to make more than this. Let me share this: just a roasted chicken breast with cucumber salad on the side.😇

I was supposed to have a photo of it while it was still unpeeled with the other spices, right? But ah, it totally slipped from my mind perhaps with the excitement of this me time. Please forgive me for that. Since the cucumber is just store bought, I always have it peeled. This is my favorite type of side dish because it suits best to my palate and yet I get to have the fiber dose I need for my body. My tummy is no longer that tolerant of some creamy and too sour stuff for dressing. As for the other ingredients, they are all a quick find in our kitchen. Grams or ml of the ingredient can be adjusted according to taste.

All I had was one cucumber (enough for me😊), black pepper, chili flakes, soy sauce, a dash of brown sugar, kalamansi/lemon juice, and sesame oil. I sliced the cucumber and mixed it with all the other ingredients. I had it chilled it in the fridge for about 40 minutes for better crunch. Alas! The chicken was an extra serving from lunch.

Now, I am settled for my meal without interruptions😄. Will you join me though?

That's it for my quick protien and fiber meal this time. I really hope to do this everyday. But honestly, being a hands-on mom who prepares the food for my children I really cannot resist eating what my children eat. It is so hard especially not having rice. I can't stop eating what they are eating too😔. I wonder if there are also moms struggling over this like me. I should overcome this difficulty! Thank you for coming by and for your support.
