Spicy Vegan Potato Skillet

While I was passing through the market, I couldn’t help but notice a group of Hausa traders selling fresh potatoes. It had been a while since I last enjoyed some, so I found myself debating whether to buy them or not. Just as I was about to pass, one of the sellers gave me a warm smile and said, "My customer, shey you go buy potato today?" His friendly gesture made my decision easier, I smiled back and asked him to sell me some. He gave me a generous portion at a great price.

While carrying my fresh potatoes home, I was thinking of a unique way to prepare them. Then, I remembered a recipe I once came across online. It looked delicious, and I knew I had to try it. So, in this post, I'll share how I made this simple and flavorful dish!

Below are the few ingredients I used to make it;

  • 1 large potato
  • 1.5 cooking spoon vegetable oil
  • 5 chili pepper
  • 1 medium size onions
  • 2 fresh tomatoes
  • 1 table spoon natural mixed spices
  • 1 tablespoons salt
  • 1 handful curry leaves

Procedure

First step I took in making this was to get my ingredients ready. So I peeled the potatoes and cut them to my desired shapes in tiny bits

Next I sliced the tomatoes, onions and grated the chili peppers and set them aside

Next I put a pot on heat, poured in my vegetable oil for frying pans started frying the potatoes

I fried the potatoes till very light brown (not crunchy)

After frying all the potatoes, I set them aside. Then reduce the oil in the pan, added onions and tomatoes to saute. Next I added the chili pepper, the mixed spices and some salt and stirred properly

Next I added the curry leaves and also stirred it properly, and after a few seconds it was time for me to add the fried potatoes to it.
I stirred the potatoes in and allowed the sauce to mix properly with the potatoes.

I allowed the potatoes to heat up for a few more seconds and it was ready to be served!

I sprinkled some black pepper on it for more flavor

The dish turned out even better than I expected! The potatoes were crispy yet soft, and mixed with the bold spices and fresh curry leaves every bite was so satisfying. I think this will pair well with a refreshing drink. I certainly loved it and I'm sure it won't be long till make it again!

Your potatoes we call sweet potatoes and your onions we call red onions. Now I want some spicy vegan potato 😜

I didn't know it was red onions lol, I only know that as onions and any other onions we see we give it a strange name lol

hehe yeah here the yellow ones are more common.
