The green onions and cilantro have a few more days in the refrigerator. I have to use them all up in my cooking.
The easiest way is to make pico de gallo. Pico de gallo is fresh Mexican salsa.
First I diced tomatoes and cut the green onions. I prefer to remove the seeds from the tomatoes, although this is not necessary. And since I have lots of green onions, I used green onions instead of white onions.
I chopped up the cilantro leaves.
Next, I added the diced jalapeño. I also removed the seeds and veins from the jalapeños before dicing them up for a milder pico de gallo; unless you want hot pico de gallo, then you may want to keep it in.
Then I put in a teaspoon of salt.
Finally, I squeezed a generous half of a lime into the fresh salsa.
Then I gently tossed the fresh salsa to mix all ingredients, covered the bowl, and placed it in the refrigerator to allow the flavors to meld.
Tonight, I had fish tacos using the smaller portions of fish. The fish is Alaska pollock battered fillets. I air-fried it for 15 minutes.
I used the 8-inch soft tortilla wrap which I heated in the microwave. The two fish fillets fit perfectly! (I was starving at this point)
Then I proceeded to complete the taco by first spreading the pico de gallo on top of the fish.
Followed by the Mexican Crema.
Mexican crema is the equivalent of American sour cream or French crème fraiche. It is usually served with cheeses like cotija or queso fresco and is a little sweeter and thinner than sour cream.
I then grated Cojita cheese on top of the crema.
I also added a bit of cheddar cheese.
You can fold the tortilla whichever way you wish; in this case, I folded it in half.
Adding an avocado is perfect. The avocado was small. I don't know what variety it was.
Cut the avocado in half and squeeze the meat out.
And top it with pico de gallo.
I eventually filled my fish taco with the avocado and pico de gallo.
The fish taco was so satisfyingly G O O D!
