Butterflies with bright large wings look very reckless, because, in combination with their somewhat slow movements, they are easy prey.
But this post is not about butterflies at all, but about one culinary moment that interested me and seemed strange to me.
And we will talk about canning for long-term storage of products about cooking stewed meat using the method that, as I learned, the Amish use.
Now recipes for long-term storage products have become popular on the Internet, and the technology that the Amish use is one of them.
For me, it was strange to see that in the process of preparing stewed meat that will be canned, they do not use autoclaves, but sterilize jars with the product in a regular saucepan without using high temperatures in the presence of high pressure, which should be a guarantee of safety from botulism bacteria.
Having learned this, I had a question: how did the Amish survive and live to this day, and not take their place among the extinct dinosaurs?
Considering that they do not even use nitrite salt and other stabilizers, but preserve it the same way I preserve cucumbers, this is extremely strange and I must find out, understand how it works.
