Everything you mention in this post is interesting. It's the first time I've read someone give this kind of opinion about the third season of Re:Zero. Well, in the end, most of the ones I read talking about her only remembered how she ended with the big final plot twist and the incredible battles she had.
I think that because it was broadcast in two parts, not consecutively, you can feel the big difference between one part and the other. Personally, I consider Re:Zero to be the best isekai currently available, and for good reason. And even this last season reaffirmed this point, given how much I watched it.
While it's true that it differs greatly from previous seasons, I don't think it's a bad thing to show us a very different side of this world that we already knew. Of course, it all depends on each person's tastes, but speaking critically and generally, I think a work is good as long as: 1) have a compelling story, which Re:Zero has always achieved, even in this last season with the appearance of the apostles and the entire pitched battle that took place in the city; 2) have very good character development, something that is evident and even more so in the case of the protagonist and even some secondary characters that we barely knew before; and 3) an excellent audiovisual work, which is more than enough just to see the different battles that took place in this last season.
Now that I think about it, there were even people who were more impressed by Re:Zero with this third season, seeing fight after fight, confrontation after confrontation, and epic moment after another. I don't know, maybe it's just a matter of opinion and taste, but what is certain is that Re:Zero has achieved something that many other anime of the same type (Isekai) have never achieved.
