I have tried coffee combined with cinnamon and another with vanilla. I think they are fabulous. I hadn't thought of using them to make quesito. I'm sure it would be exquisite.

In the quesillo recipe, one of the cups of water, you are going to replace it with a mixture of liquid coffee, prepared with cinnamon sticks, vanilla, and some liquor, I used cream punch and a little bit of rum. The rest of the ingredients are the same as always. Try it and you will love it.
