They all look to be doing well. I do like shallots - they are much milder than onions for curry pastes. And I love making sambal matah. :)

yeah, we use shallots a lot in our dishes. ;) you should try samba emba, which is basically a fried shallot and garlic, with chili and shrimp paste.

I'd love to try samba emba - I don't have any terasi though I've been meaning to get some. Sounds perfect. YOu guys are the absolute KINGS of fresh sambal! My son and I often experiment with them when he cooks with me.
Sadly shallots are really expensive here and they take so long to peeel and chop! I cheat sometimes and use red onions with a mandolin but prefer the mild shallot for sure!
