I am a huge fan of eggplants. Apparently the modern varieties are less bitter so soaking water or salt isn't necessary and I certainly don't do that! The pears look INCREDIBLE.

We don't soak eggplants either.
But one day I bought an eggplant in the store and it was bitter and had a rough peel.
