While the technology certainly helps, I would be really afraid to attempt to do this with such an expensive piece of meat... looks like you did a good job though!

        I totally agree with you. I think it helps that my brother in law just got it as part of his cow that he bought. He didn't seem to be too invested in whatever happened to it.
