Fresh tomato paste stew is one of Nigeria’s signature recipe that is enjoyed in all homes across the country, these few years Nigerian stew has made it's way to alot of places all around the world.
Stew is regarded as a standard dish for occasions like weddings, birthday ceremonies, traditional marriages, burials and so forth.
The preparation of stew as a home signature, as of early years it's known as a dish prepared specifically for the rich or during festive seasons like Christmas, Salah breaking of fast, and new years celebrations 🎉
Today civilization has taken over alot of areas of the country, making alot of things accessible to the general population, and with a little bit of money you can still prepare stew.
This special delite is usually eaten with boiled rice, boiled spaghetti, boiled yam, bread and so many others.
Today I will be showing you step by step method on how I prepare stew using the little available ingredients.
Ingredients:
Fresh tomato🍅
Tomato paste
Fresh pepper
Onion
Seasoning include, Maggi, salt
Iced fish🐠
Spices include thyme, curry, nutmeg
Groundnut oil
Spaghetti
I started with washing, seasoning the iced fish with Maggi, salt, onion, dried pepper, thyme and curry and allowing it to steamer on the gas for 3minutes.
I grated the fresh tomato and pepper with a blender, this blended mixture can either be used like that or boiled till dry to remove excess water from it
the addition of onion is always optional
I place my cooking pan on the gas cylinder, adding few quantities of groundnut oil, i allowed the oil to get hot a bit then i added my steamed fish for fry. Later on i added my sliced onion, allowing it to fry until it turns golden brown.
I added my tomato 🍅 paste into the pan, i stir and continue to stir to avoid it from getting burnt 🔥 i tasted a little bit from it to know if it still has a slappy taste, always make sure there is no slappy taste
I added my grated fresh tomato and pepper to the tomato paste mixture and allowed it to boil for like 2 minutes.
I added the already steamed and fried fish to the mixture on fire 🔥 and allow to steamer for like 2-3 minutes. I added my seasoning cubes and some additional dried pepper because i prefer it to be peppery,add a little bit of water, Leave for another 3-5 minutes and your stew is ready to be served.
I cooked spaghetti 🍝 to be eaten with the stew, I parboiled the spaghetti and added a bit of groundnut oil for the strands not to cake together, I filtered the first water to remove a bit of starch, added water again, with a pinch of salt, i allowed it to boil for like 10minutes, spaghetti is ready to be served with the stew.
It is best eaten with chilled drinks like Coca-Cola,malt drinks.
