What you've done is a simple yet clever recipe for eating zucchini. Skipping the flour and eggs and still achieving that crispy texture with cheese and breadcrumbs is quite an accomplishment, in my opinion. The air fryer was a great help here. I'm not a big fan of zucchini either, but maybe this recipe will change my mind. 😊
