Growing up everyone knows I am a foodie. Me that use to finish one long loaf of bread back then? my friends will be shouting.
At a point when I got to the Uni, it became more of an envy thing as you'd see my roommates drowning in slim tea and other fat burner nonsense but not me. I am eating shawarma, licking ice cream, eating burgers and all other junks plus fatty food and my roommates will green with envy.
One outrightly told me that she can't wait for me to give birth. In her opinion, all the junks and fatty food I have been eating will come manifesting as fat and leave me shapeless. Her threat didn't scare me as I continued with my large appetite.
There was a time I had accompanied my uncle for a Niger Delta Development Commission (NDDC) workshop at the Golden tulip Hotel in Port Harcourt, and our refreshment was a buffet.
I did not even try to act polished as I made sure I ate everything that table has to offer.
I was frequenting the table so much so that the Caucasians amongst us were marveled, and some would meet me at the table and say "for such a slim body you sure got quite an appetite" and we'd just laugh as we went round the table picking delicacies of our choice.
Needless to say, I am that foodie that will go to great lengths just to satisfy her cravings.
So last week, I had wanted to eat Akara, pap and bread so bad but no one was selling at my environment.
I went to my kitchen to snoop and discovered I basically have all the ingredients to make the Akara so I attempted frying some.
FIRST, THE RECIPE AND PROCEDURE
1)To make Akara, you’d need beans. This beans has been picked for dirt and stones
Soak briefly in water
**De-skin the beans by rubbing it against your palm to remove its shaft **
**My blender is bad, so I made use of the local engine. This was after I had assembled the cleaned beans and Onions in the transparent container. **
The pepper on top of the transparent container was added to the beans and onions during grinding.
After the whole grinding process at the market, I got back home with the blended beans and mixed it thorougly with a desired amount of salt and water to get the right consistency, then proceeded to scooping and frying.
**And VOILA! Golden balls of deliciousness. **

The above delicacy is a breakfast ritual in most Nigerian homes, such that eight out of ten families enjoy this delicacy especially on Saturday mornings, usually after laundry.
Sadly as time progresses, this delicacy is not readily available in most areas. Growing up it use to be a very popular street food you will see in every street corner both morning and night. Now you'd be very lucky to see one, else you fry like I have.
