I am a person who enjoys a good dessert, and a good cake will remain in my memory for a long time, until another comes along that surpasses it on my palate.
One of the senses that leaves the most memories in your mind is taste, followed by smell, and here these two play a very important role since the cake must not only taste good but must also smell good.
In my family, all the women know how to bake cakes; some of us are good at it, others better. But my niece Gabriela's cakes are spectacular in their shape and flavor. We all know that cake is made with butter and sugar, then eggs, and finally, milk and wheat flour. My niece has taken pastry courses, just pastries, and this has given her the opportunity to improve every day until she becomes a good pastry chef.
She says the secret is in the materials she uses, since they must be of good quality. The truth is that I've tried others whose taste I don't like, and I think it's because, to lower the final costs, they use cheaper ingredients, but the results aren't good.
When I go to a party, I remember it not only for what happened, but also for what was consumed. I've heard comments like, "I loved that tartlet you served; I've never had anything like it before." And the best comment is the one about the cake. If you serve a good cake with just the right amount, your guests will leave your party satisfied and want to come back.
What's the difference between a cake and a sponge cake?
I already explained that the cake is made with a mixture of butter and sugar until the color lightens, then the eggs are added one by one, then milk is added alternately with the wheat flour.
This mixture becomes compact when it's finished baking and is decorated with a meringue. The sponge cake is made differently because you start by whipping the egg whites with the sugar until they form peaks, then fold in the flour and add water and egg yolks.
The sponge cake is porous, so it is suitable for a cake that needs to be moistened with liquid, like when we make the 3 leches.
So our memories are associated with what we eat, and if it's delicious, it will stay with us for a long time.
