Hello Hivers of this community, I just want to share with you today what we ate yesterday with my family.
It’s been raining these past few days at our place. For some it was bothersome especially those who works and for the students, but for rain is a sign of abundance and blessings that will come on our life. Just like this morning as I checked on our bananas it’s already ripe. This banana was really big that you can be already full just by eating one piece. My kids really love bananas, that’s why we decided to plant some at our backyard instead of buying it, it will help saved some money.
I decided to cook authentic Vigan “longganisa” for our breakfast. As the vendor said its flavor was salty, slightly sour and garlicky. The procedure for cooking this was to boil it in water first then poked it with fork so that the oil will come out from it. Then when the water is reduced set the fire into low so that it wouldn’t burn. I can already smell the aroma of the garlic while cooking it. It was really delicious and it is a must try breakfast here in the Philippines.
It was still raining at noon, but not that heavy, I don’t usually take a nap at noon but the weather is calling me, that’s why I sleep and as I woke up it’s already 2:30 in the afternoon. While my kids are still sleeping, I decided to cooked some snack. I saw the lumpia wrapper at our kitchen then, we had some left-over sautéed bottle guard, so I decided to cooked “lumpiang gulay” that’s how we call it in our local, when vegetables are wrap then fried. It was also a typical food whenever there are occasions here in the Philippines like birthday parties. These “lumpia” that I cooked was very simple to prepare.
The other ingredients I added was a piece of egg and 3 tablespoon flour; I added it as binding agent for the vegetables. Then I just mixed it and add some pepper and salt to taste. I also added a piece of "longganisa" which is our breakfast.
For wrapping it, I just added 1 tablespoon of the vegetable mixture in every lumpia wrapper. I made a total of 13 pieces lumpia, just enough for our snack today.
While I was cooking the lumpia, I prepared some vinegar with sugar, onion and salt, for me it’s the perfect dipping sauce for the “lumpia” that I cooked.
We enjoyed this snack once in a while. My kids also enjoyed eating our snack today. They really love lumpia.
No matter how simple the food you prepare for your family, If you cooked it with love, it becomes extra special.
