Taro and cheese omelet (Eng/Esp)

Due to the great family acceptance of the potato and plantain omelet I made yesterday, today I dared to make another one, but now the star ingredient is Chinese taro, a very versatile vegetable that adds substance to this recipe. I'll show you the process of this delicious recipe so you can keep it in mind when planning a good breakfast.

Ingredients:

  • 2 eggs
  • 1/2 Chinese taro root
  • Hard white cheese
  • Pinch of salt
  • Oil
  • 2 cups of water

Preparation:

I rubbed oil on my hands to remove the skin from the Chinese taro, as there is a variety that causes itching. Then I chopped it into small pieces and parboiled them. If I hadn't taken precautions, the itching on my hands would have prevented me from continuing for quite some time.

Meanwhile, I beat the two eggs in a deep bowl until they became foamy.

After twenty minutes, I checked with a fork to see if the taro was soft, took it out of the water, and added the pieces of taro to the beaten eggs along with a pinch of salt. Then I grated a little white cheese on top and stirred.

Next, I spread a little oil in a frying pan and poured in the mixture to form the omelet. I cooked it for five minutes on each side and removed it from the pan. The result was excellent—a breakfast capable of satisfying even the most demanding appetites.

Preparación:

Me unté aceite en las manos para retirar la corteza del ocumo chino, puesto que existe una variedad que produce picor. Luego lo piqué en trozos pequeños y los sancoché. De no tomar precauciones, la picazón en las manos no me dejaría avanzar por un buen rato.

Mientras tanto, en un envase hondo batí los dos huevos hasta convertirlos en espuma.

En veinte minutos comprobé con un tenedor que el ocumo estaba blando, saqué del agua y agregué los pedazos de ocumo a los huevos batidos junto a una pizca de sal, luego rallé un poco de queso blanco por encima y removí.

Posteriormente, unté un poco de aceite en un sartén y allí vertí la mezcla para formar la tortilla. Cociné cinco minutos de cada lado y saqué del sartén. El resultado fue óptimo, un desayuno capaz de satisfacer apetitos exigentes.
