How I Made Fried Rice

There is something unique about a well-prepared pot of fried rice especially when all the necessary ingredients are added in the right quantity. I made this meal about two sundays ago and I took my time to create a pot of goodness. I saw this recipe for the first time when I visited a friend about two years ago and since then it has been the game changer for me. I had my own way of cooking fried rice, it is a good technique as well but not as sophisticated as this new one.

So, on that day, after I returned from church I began the process of making the rice. I had got the necessary ingredients that I needed from the market about two days earlier, so there would be no important ingredient left out. On Sundays, it is a tradition in my house to eat rice but the only difference each Sunday is the type of rice - white rice, jollof rice or fried rice.

I decided to make a big pot that is enough to last for breakfast, lunch and dinner. Luckily there was some left to do a quick breakfast the next day which makes Monday morning school runs much easier for me. There's a satisfying feeling when you eat the same meal at different times - the tastes get better each time.

Ingredients
  • 5 cups rice

  • 2 meduim onion

  • Spring onions

  • 5 smallsized carrots

  • Vegetable oil

  • Chicken stock

  • Spices

  • Salt

  • Liver

  • Green pea

  • Green bell pepper

  • Red bell pepper

  • 1 tsp curry

  • 1 tsp thyme

  • 2 seasoning cubes

How to prepare
  • First, wash all your veggies thoroughly and cut into desired size and set aside.

  • Next, place your pot on meduim heat, add some vegetable oil and stir fry some onions. Add some salt, curry and chicken stocks. Stir well.

  • Now, add already parboiled rice to the pot and stir fry for about 5 minutes. When you notice some of the rice grains are beginning to turn brown add more chicken stock and allow the rice steam for about 15 - 20 minutes on low heat.

  • You can make use of a foil to cover the pot alongside the cover of the pot so as to ensure it steams well.

  • In a seperate pan, add some vegetable oil and stir fry your onions, green bell pepper, red bell pepper, spring onions, peas, and carrot.

  • Then gently mix the rice with the veggies. Taste and adjust the seasoning if needed.

  • Take of the heat and your food is ready.
