Greetings my lovely friends of Hive food. Hope you are having a lovely Saturday. Am happy to be in this lovely community for the first time and to share with you the recipe on how i prepared this healthy and delicious unripe plantain with vegetables.

INGREDIENTS
2 plantain
2egg
2onions
3carrot
2 table spoon of vegetable oil
20 pieces of red pepper
½ green pepper
10 sticks of spring onions
8 Green beans
Salt to taste
50cl of water

PREPARATION
First i cut the unripe plantain, wash it very well and peel the back cover

Then i pour in the unripe plantain inside the blender, add in 2 raw egg and add in water, allow it to blend smoothly.

Here i wash my onions and vegetables, then slice them to desirable sizes.

I pour in the blended unripe plantain in a clean bowl, add in the vegetables, red pepper, salt for taste and mix all together.

In a clean pan, i add in 2 table spoons of vegetable oil to the frying pan, pour in the the plantain mixture with veggies, stir and allow to cook for 15minutes.

Here our delicious, tasty and healthy unripe plantain veggies is ready to be served. This is very simple and easy to prepare. It also heathy for diabetes patients and for someone who is on diet.
