Using Pulled Pork: My Dinner

I cooked pulled pork in the crockpot last Sunday. If you're interested in the recipe for pulled pork, just ask.

Pulled pork is made from inexpensive cuts of pork like pork shoulder or pork butt. It's a great way to cook in volume at once and get more for your money. You can also find creative ways to use pulled pork to keep things interesting. The flavors of pulled pork improve the next day and can be used to make a variety of dishes for several days. They are wonderful for adding to grain salads, pastas, and for piling over sandwiches, and for topping nachos.

Initially, I thought of making Pull Pork Tacos, but changed my mind seeing that I still had these 👇 tortillas left over in the refrigerator.

My go-to appliance is the air fryer. I lined the basket of the air fryer with aluminum foil, placed the right amount of pull pork, sprayed the meat with avocado oil, and salted it a bit.

I air-fried the pulled pork at 400 degrees F for five minutes, and while that was going, I finished up prepping the pica de gallo.

Everything was so quick and that's the good thing about advance preparation!

With the tortilla heated up in the microwave, I was ready to make my dinner!

Then it is just a matter of assembling the "big" soft taco!

I need more protein, so to my meal I added

Looks delicious. Usually when I do pulled pork it's on the smoker, but I would love to try it in the slow cooker like this sometime with a Mexican flare. It's usually one of my go-to dishes when we eat out, so doing it myself would be cool.

I use anywhere between 3 to 5 lbs of pork shoulder that is cut in half. Spray the crock pot with cooking spray. Lay meat in your crock pot. Poke it with fork all over to allow the marinade to get in.
In a small bowl mix: 3 tablespoons smoked paprika, 1 tablespoon sea salt, 1 tablespoon ground black pepper, 1 tsp garlic powder, 1 tsp onion powder, and 1 tsp ground mustard. Mix these dry spices together.
Add 1/3 cup of liquid smoke (this is because you aren't using a smoker, therefore it is a key ingredient!). Mix it very well.
Pour this mixture over the pork. Rub it on top and bottom, all over the meat.
Cover the crockpot. Cook on high for 5 to 6 hours, or on low for 7 to 9 hours.
When cooked, remove the crock pot, and use to forks to shred!

Probably going to be a while, but I will! Have you ever done one in a pressure cooker?

YES, I have! Same ingredients, cook on high for an hour. Easy-peasy!

If you wish to slow-cook it in the oven, you can too.

Interesting. We have a instant pot and we love it.

For instant pot, 30 to 40 mins will do with a natural release of pressure.

Shredded Cheddar Cheese

I loved cheddar cheese as it tastes better than mozilla cheese.

I love cheese too, especially hard cheeses like Parmigiano.

Pulled Pork is a regular monthly dish at my home. I use a Hot Pot pressure cooker shortcut method. We kind of ad-lib some of the ingredients so we get slightly different taste combinations.
