Yummy eggplant torta or eggplant omelet! This is my brother's favorite too. Of all the eggplant recipes, I enjoy this the most. I also like toasting the edges a bit; love the crunch it gives. The mussel soup makes the meal more appetizing. It always makes you feel happy when every one enjoys the food you prepare. For sure, everyone had a hearty meal!
