Plantain arepas with oats (Eng/Esp)

English version

Today's breakfast takes me in a different direction in terms of ingredient combinations. This time, the star of the show is a fruit, the apple banana, but it doesn't come alone; it's accompanied by rolled oats. Here I have a nutritious combination of potassium and fiber.

On the other hand, I already mentioned that plantain arepas are my favorite, but I was curious to know how much the flavor would change if I replaced the plantain with banana. I guess it wouldn't change much because they belong to the same family.

Ingredients:

  • 2 apples
  • 50 grams of rolled oats
  • 100 grams of yellow corn flour
  • 100 grams of white corn flour
  • Salt to taste
  • 2 cups of water

Procedure:

I peeled the applesauce bananas, chopped them into pieces, and blended them with the two cups of water. I obtained a thick mixture, which became the base for preparing the arepas.

Shortly after, I added the two types of corn flour and kneaded the dough. I like to use this combination because it makes the dough softer and gives the arepas a better consistency when they are ready.

Next, I added the rolled oats and continued kneading to incorporate them into the mixture, as this would give it more flavor and texture.

Next, I moistened my hands with a little water and shaped the arepas. A preheated budare with an oiled surface was waiting to receive the five arepas.

In 20 minutes, over medium heat, this dish was ready. I just kept an eye on it, stirring periodically so that it wouldn't stick or burn.

The final step was to spread butter on them and grate cheese on top. The flavor is spectacular, highly recommended because the dough acquired a slight sweetness that went perfectly with the cheese. It's a breakfast I would definitely have again very soon.
