I title my post A rich Ponqué to celebrate a birthday because actually this type of snacks or sweets I had not made it, I had the recipe saved waiting for the moment to do it. The truth is that I have dedicated myself to small snacks with few ingredients, without using butter, eggs and substituting others that give good results.
My husband's birthday was approaching, he is not a lover of cakes with so much sweet, chocolate, or decorated with creams, he just wanted a burrera cake as we know it here in Venezuela. I remembered the recipe saved in my agenda, I read the ingredients of course there were not many, then I tell the process, also with the help of my beloved daughter, making company and talking. As every Venezuelan birthday, besides this cake, a delicious quesillo and a jelly were made.

Para este rico ponqué se utilizó
3 tazas ½ de harina leudante
2 tazas ½ de azúcar
1 taza de margarina
1 taza de leche
1 cucharada de esencia de vainilla
4 huevos
Ralladura de limón (opcional)
For this delicious cake we used
3 ½ cups of leavening flour
2 ½ cups of sugar
1 cup margarine
1 cup milk
1 tablespoon vanilla essence
4 eggs
Lemon zest (optional)

First beat the margarine, you can use a hand or paddle mixer (manually).
Then, once the margarine is well beaten, add the sugar, step by step and beat constantly to unite these two ingredients very well.

The eggs are added one by one (not as we sometimes do, all at once) beat well for each egg that is added.
The vanilla is added to the mixture.

In the next step, separate the flour into three parts, the same as the milk, add one part of wheat flour, another part of milk, and so on until the flour and milk are integrated with the previous ingredients.

Once the mixture is ready, it is placed in a buttered and floured mold.
It is taken to the oven, previously heated for a prudential time (I emphasize that everyone knows their oven and it will depend on it), one of the indicators by which I take is the smell, there I allow myself to open the oven and use the wooden stick to know how the cooking of the cake is going.

Once ready, unmolded, cold, I proceeded to put powdered sugar to decorate a little, besides putting lemon zest, this gave a special touch to the presentation.

Here, as in every Venezuelan birthday, quesillo and jelly are part of the celebration. Everything was delicious, homemade with lots of love.
